Bor Dyke Veal Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. Chop the veal and bacon separately, then mix them together.

  2. Add the lemon rind, salt, cayenne, nutmeg, and mace to the meat mixture and combine well.

  3. Press the mixture into a dish, making the center higher than the edges.

Bake and serve

  1. Bake in a 350°F (175°C) oven for 1 to 1½ hours.

  2. Once baked, remove from the oven and let it drain on a strainer to remove excess fat.

  3. Serve hot or cold, and if serving hot, warm slices in a Dutch oven or with gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the lean body of the cake, giving it a firm, sliceable texture when set.
Bacon
Adds fat and savory flavor that keeps the lean veal moist during baking.
Lemon rind
Adds bright aromatic oils that lift the rich meat flavor.

The step that matters

Draining the baked cake. Rendered fat pools during baking, and letting the cake drain on a strainer removes excess fat so the slices hold together and taste less greasy.

Swap the mace

How well each one fits the dish's main ingredients (veal, lemon, pepper, nutmeg):

  1. Marjoramfits better
  2. Parsleyfits better
  3. Sagefits better
  4. Macethe original

Fit is the average pairing score against veal, lemon, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
