Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushroom buttons
Add earthy flavour and a tender texture to the stew.
Butter
Adds richness and carries flavour when the mushrooms are sautéed.
Sauce tournee
Forms the creamy base that coats the veal and mushrooms.
Egg yolks
Thicken the sauce and give it a silky, rich body when gently set.
Lemon juice
Adds acidity that brightens the rich sauce and balances its flavour.

The step that matters

Heat the sauce until just set. Egg yolks thicken through gentle heat, but above about 80°C they curdle and turn grainy. Heat slowly and stop as soon as the sauce thickens.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, butter, sauce, egg, lemon):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, butter, sauce, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
