To Boil Asparagus

Ingredients

Directions

Prepare the asparagus

  1. Scrape the stems of the asparagus clean, removing 1 to 2 inches from the green tips.

  2. Place the cleaned asparagus in cold water until ready.

  3. Tie the asparagus in equal-sized bunches and cut the large ends evenly.

Cook and serve

  1. Boil plenty of water and add the asparagus, cooking until tender.

  2. Toast the bread on both sides until golden brown, then remove the crust.

  3. Quickly dip the toast in the boiling water and place the asparagus on top, with tips meeting in the center.

  4. Serve with rich melted butter and optionally add vinegar to the sauce.

What each ingredient does

Asparagus
Forms the main vegetable body of the dish, cooking to a tender texture in boiling water.
Bread
Provides a toasted base that soaks up moisture and adds a crisp, browned contrast.
Butter
Adds richness and fat, coating the asparagus and sauce with a smooth, savoury flavour.

The step that matters

Cooking the asparagus until tender. Asparagus turns from crisp to mushy within a short time in boiling water. Checking it early keeps the stalks tender yet firm, and the bunches should be sized evenly so they cook at the same rate.

Swap the asparagus

How well each one fits the dish's main ingredients (bread, butter, vinegar):

  1. Shallotfits better
  2. Mustardfits better
  3. Capsicumfits better
