Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Mix the cream crust with the grated cheese until well combined.

  2. Roll out the mixture lightly twice.

  3. Cut the dough into small rounds using a paste cutter.

Bake and serve

  1. Wash the rounds with a mixture of yolk of egg and a little milk.

  2. Bake in a preheated oven at 400°F (200°C) for about 15 minutes.

  3. Serve very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream crust
Provides the flaky pastry base that puffs and separates into layers when baked.
Parmesan cheese
Adds savoury flavour and browns on the surface as it bakes.
Egg yolk
Brushed on as a wash, it gives the rounds a glossy, golden browned finish.

The step that matters

Baking the rounds. The oven must be properly preheated so the dough gets a sharp burst of heat, which helps the layers puff rather than spread or turn pale and dense.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
