Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Pour boiling milk over the bread crumbs and butter in a bowl.

  2. Cover and let stand until the bread is well soaked.

Make the pudding

  1. Stir in sugar, eggs (5 yolks and 3 whites), candied orange rind, and nutmeg until combined.

  2. Once the mixture is nearly cold, pour it into a baking dish.

Ice and bake

  1. Beat the reserved egg whites to a firm froth and mix with sifted sugar.

  2. Spread this icing over the pudding.

  3. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, giving the pudding its structure and body.
Bread crumbs
Soak up the hot milk and form the soft, tender body of the pudding.
Milk
Moistens the bread and dissolves the sugar, forming the custard base.
Butter
Adds fat for richness and a softer, more tender crumb.
Sugar
Sweetens the pudding and helps the top brown in the oven.
Candied orange rind
Adds citrus aroma and a bright, slightly bitter flavour contrast.

The step that matters

Let the mixture nearly cool before pouring it into the dish. Eggs begin to set around 160°F (71°C), so adding them to very hot milk can scramble them and leave the pudding grainy. Cooling the mixture first keeps the custard smooth.

Swap the orange

How well each one fits the dish's main ingredients (bread, butter, milk, sugar, egg, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against bread, butter, milk, sugar, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
