  2. Quickly pare, quarter, and weigh 4 pounds of apples or quinces, then add them to the water.

Make the juice

  1. Gently stew the fruit until well broken but not completely pulpy.

  2. Strain the juice through a jelly bag or closely-woven cloth suspended over a deep pan until it stops dripping.

  3. If the juice is not clear, clarify it before using for syrup or jelly.

What each ingredient does

Apples or quinces
Provide the fruit flavour, natural pectin and acidity that give the juice its character.
Spring water
Extracts flavour and softens the fruit as it stews, forming the juice base.

The step that matters

Gently stew the fruit until well broken but not completely pulpy. Overcooking releases pectin-rich pulp and cloudy solids that pass through the strainer, making the juice murky. Stopping at a partly broken state lets the juice drain clear.
