What each ingredient does

Savoy cake or rice cake
Provides a light, sponge-like base that holds the jelly and coconut layer.
Guava jelly or fine strawberry, raspberry, or currant jelly
Adds sweetness and fruity flavour, and its moisture softens the cake layer where it sits.
Fresh grated coconut
Adds chewy texture and a mild, sweet coconut flavour between the cake layers.
