What each ingredient does

Gooseberries
Provide the fruit base and natural pectin that helps the jam thicken as it cooks.
Powdered sugar
Sweetens the jam and, at high concentration, helps it set and keep its texture.

The step that matters

Boil quickly with the sugar for 45 minutes. Sugar and fruit pectin only set properly once the mixture reaches a high enough concentration, which needs a rapid boil. Constant stirring and skimming keep the jam from scorching on the bottom and removes scum that would cloud it.
