What each ingredient does

Green gooseberries
Provide the fruit that becomes tender, clear and chewy after simmering and drying.
Sugar
Sweetens the fruit and, as a thick syrup, preserves it and helps it keep its shape while drying.

The step that matters

Simmering the gooseberries in syrup. Simmering only until the fruit turns clear and tender keeps the skins intact and lets syrup penetrate evenly. Overcooking can split or collapse the berries, while undercooking leaves them firm and less able to absorb sugar.
