What each ingredient does

Gooseberries
Provide the fruit that is cooked, steeped and then dried into the preserve.
Sugar
Sweetens the syrup and helps preserve the fruit by drawing out water.

The step that matters

Pouring the hot syrup back over the gooseberries. Sugar syrup must be re-boiled and poured on immediately so the fruit stays hot and the syrup concentrates enough to preserve it; a cooled syrup can let the fruit spoil.
