What each ingredient does

Strawberries
Provide the fruit, flavor and color that form the body of the jam.
Sugar
Sweetens the jam and, with boiling, helps it thicken and set.

The step that matters

Adding the sugar off the heat. Mixing the sugar in fully off the heat helps it dissolve evenly without scorching. The second boil must be quick, because sugar concentration and a brisk boil are what make the jam set. Too little boiling leaves it runny, while prolonged boiling can dull its color and flavor.
