What each ingredient does

Mushrooms
Are the main ingredient; they soften in the brine and keep a firm, mild texture.
Coarse sea salt
Seasons the brine and draws moisture out, helping preserve the mushrooms.
White peppercorns
Flavour the brine with a mild, sharp warmth.

The step that matters

Let the mushrooms cool completely before sealing. Mushrooms packed while still hot can trap steam and condensation, which dilutes the brine and encourages spoilage. Cooling fully before oil and corks are added keeps the pickle stable.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, ginger):

  1. Turmericfits better
  2. Clovefits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against mushroom, ginger. Candidates are from the same food group and used in at least 100 recipes.
