Why it works: Rum and brandy are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 1,058 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Cambridge Sulk Punch
Ingredients
Directions
Make the punch
In a pot, combine 2 quarts of new milk and the thinly pared rind of 1 lemon.
Add ½ pound of sugar and bring the mixture slowly to a boil.
Remove the lemon rind and take the pot off the heat.
Stir in 2 well-whisked eggs mixed with ½ pint of cold milk, strained through a sieve.
Ensure the milk does not boil after adding the eggs.
Gradually add 1 pint of rum and ½ pint of brandy.
Serve
Froth the punch and serve immediately in warm glasses.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Egg proteins set gently when warmed, thickening the punch and giving it a creamy body.
- New milk
- Forms the creamy base of the punch and carries the other flavours.
- Sugar
- Sweetens the punch and balances the richness of the milk and the strong spirits.
- Rum
- Adds alcohol and a warm, aromatic flavour to the punch.
- Brandy
- Adds further alcohol and a fruity, warming depth to the punch.
The step that matters
Adding the eggs without boiling the milk. Egg proteins set and curdle when overheated, so the milk must stay below boiling after the egg mixture goes in. Boiling would make the punch grainy instead of smooth and creamy.
