Geneva Rolls, or Buns

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Break the butter into very small crumbs with the flour.

  2. Add the salt and mix in the yeast with the milk and saffron water.

  3. Let it rise for 1 hour.

  4. Stir in the eggs and enough hot milk to make a light dough.

  5. Let the dough rise for another 30 to 45 minutes.

Shape and bake

  1. Mould the dough into small rolls.

  2. Brush the rolls with beaten egg yolk.

  3. Bake in a preheated oven at 400°F (200°C) for 20 to 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the main structure of the dough as its gluten network develops.
Butter
Adds fat that tenderises the crumb and enriches the flavour of the rolls.
Solid yeast
Produces gas as it ferments, making the dough rise and become airy.
Whole milk
Adds moisture and milk proteins that help browning and a soft crumb.
Eggs
Add richness and structure, helping the dough set and hold its shape.

The step that matters

Let the dough rise for another 30 to 45 minutes. Yeast needs enough time to produce gas and expand the dough. Underproofed rolls stay dense, while overproofed dough can collapse or lose its structure in the oven.

Swap the saffron

The recipe marks saffron as optional. How well each one fits the dish's main ingredients (flour, butter, milk, egg, sugar, currant, lemon):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Allspicefits about as well
  4. Saffronthe original

Fit is the average pairing score against flour, butter, milk, egg, sugar, currant, lemon. Candidates are from the same food group and used in at least 100 recipes.
