What each ingredient does

Fenugreek seed
Adds its characteristic bitter, maple-like aroma that defines the blend's flavour.
Coriander seed
Provides the bulk of the blend with a citrusy, mild aroma.
Black pepper
Contributes sharp, pungent heat and aroma to the powder.
Cayenne pepper
Adds chilli heat to the blend.
Turmeric
Gives the powder its yellow colour and an earthy flavour.

The step that matters

Drying the mixture before the fire. The powder must be fully dry before cooling and bottling. Residual moisture can let the spices clump, turn stale or spoil in the sealed bottle, so turning it often helps it dry evenly.
