Chocolate Creams

Ingredients

Directions

  1. Prepare starch trays and plaster of Paris molds.

  2. Smooth the trays and molds with small cream molds.

  3. Melt the cream gently, ensuring it does not boil.

  4. Fill the molds with the melted cream and let them set for about an hour.

  5. Carefully remove the creams from the molds using a soft brush.

  6. Melt the sweet chocolate paste until smooth.

  7. Dip the creams into the melted chocolate, two or three at a time, using a long fork.

  8. Place the coated creams on glazed paper or tin sheets to dry.

  9. Store in a cool place to harden.

  10. Optionally, glaze with a solution of shellac and spirits of wine using a camel's-hair brush.
