To Pickle Gherkins or French Beans

Ingredients

Directions

  1. Make a brine with salt and water strong enough to float an egg.

  2. Submerge the beans or gherkins in the brine for nearly a week.

  3. Remove them from the brine and place in a pan with equal parts vinegar and water to cover.

  4. Heat the pan until almost boiling, then maintain this heat for a couple of hours.

  5. Let them cool in the liquid.

  6. Once cool, strain the vinegar and water from the beans or gherkins.

  7. Transfer them to a jar and cover with cold vinegar flavored with mace, whole pepper, allspice, and bruised ginger.

  8. Seal the jars tightly and cover with a bladder wetted with the pickle.

  9. Store in a dry, cool place.
