Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream of tartar
Adds acidity that gives the drink its sharp, tangy flavour.
Cochin ginger
Provides the spicy, aromatic flavour that defines ginger beer.
Loaf sugar
Feeds the yeast and adds sweetness to balance the acidity.
Ale yeast
Ferments the sugar into carbon dioxide, making the drink fizzy.

The step that matters

Let the liquor cool to lukewarm before adding the yeast. Boiling water kills yeast cells. Cooling the mixture to lukewarm lets the yeast survive and start fermenting the sugar, so the drink carbonates properly.

Swap the lemon

How well each one fits the dish's main ingredients (cream, ginger, sugar):

  1. Vanillafits better
  2. Coconutfits about as well
  3. Lemonthe original
  4. Orangefits about as well

Fit is the average pairing score against cream, ginger, sugar. Candidates are from the same food group and used in at least 100 recipes.
