Chicken Croquettes

Ingredients

Directions

  1. Remove skin and gristle from the chicken and mince it finely.

  2. If available, add a slice of ham or tongue and mince it with the chicken.

  3. Season the mixture with pepper, salt, and a pinch of powdered mace or a small grate of nutmeg.

  4. Melt the butter in a saucepan, then mix in the flour and cook without browning.

  5. Gradually add the milk, stirring until it boils.

  6. Stir in the minced chicken mixture and remove from heat.

  7. Once mixed, stir in the yolk of one egg.

  8. Transfer the mixture to a dish and let it cool.

  9. Flour your hands lightly, take a tablespoon of the mixture, and roll it in flour to prevent sticking.

  10. Shape the mixture into pear-like forms.
