Pigeons with Croutons

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Wrap pigeons in buttered paper and roast for 15-20 minutes.

  3. Five minutes before done, remove paper and bacon to allow browning.

  4. Fry the bread slices to make croutons, hollowing out the center.

  5. Cut pigeons in half from neck to tail and place each half on a crouton, cut side down.

  6. Garnish with watercress, drizzled with oil, vinegar, pepper, and salt.

  7. Serve with clear gravy and bread sauce.
