Florence Biscuits

Oven, in the book's wordsA moderately quick oven

Ingredients

Directions

The book says “a moderately quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Rub the flour and butter together until smooth.

  3. Add the creme-de-riz, sugar, and baking powder.

  4. Mix into a stiff paste with the yolk of the egg and a little orange-flower water.

  5. Blanch the almonds in boiling water, then strain and remove the skins.

  6. Cut the almonds into thin shreds.

  7. In a bowl, combine the egg white with the shredded almonds and enough icing sugar to form a stiff paste.

  8. Roll out the dough to about ⅛ inch thickness.

  9. Cut the dough into half moons, diamond shapes, or fingers.
