Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Plum Cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Beat the butter and sugar until creamy.

  2. Add the egg yolks one by one, beating for ten minutes.

  3. Mix in ¾ of the flour and the beaten egg whites.

  4. Chop the candied peel and raisins.

  5. Mix the remaining flour and baking powder with the fruit, then combine with the cake mixture.

  6. Pour the mixture into a well-buttered tin.

  7. Bake for two hours in a preheated oven at 400°F (200°C), reducing the heat towards the end.
