Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Whipped to stiffness, it gives the almond paste lightness and body.
Ground almonds
Provide the bulk and nutty flavour of the almond paste.
Icing sugar
Adds sweetness and a smooth, fine texture to the paste and glaze.
Apricot jam
Adds moisture and sweetness, and helps the layers stick together.
Powdered chocolate
Gives the glaze its chocolate flavour and dark colour.

The step that matters

Pouring the glaze. The glaze should be only slightly warm and poured quickly; if it is too hot or too thin it runs off the cake, and if it cools too much it sets unevenly and clumps.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar, egg, chocolate, apricot):

  1. Vanillafits better
  2. Figfits better
  3. Cherryfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar, egg, chocolate, apricot. Candidates are from the same food group and used in at least 100 recipes.
