Mutton Pies

Ingredients

Directions

  1. Melt the butter in a frying pan.

  2. Cut the mutton into small dice.

  3. Fry the mutton gently in the butter with the eschalot, parsley, pepper, and salt for about 10 minutes.

  4. Stir in the flour, then add the gravy and cool the mixture on a plate.

  5. For the pastry, mix the flour and salt in a bowl, then add cold water to form a stiff dough.

  6. Roll the dough out to ½ inch thick, spread a third of the butter in small pieces, and sprinkle with a little flour.

  7. Fold the edges into the center, form into a ball, and refrigerate for 30 minutes.

  8. Roll out again, add half the remaining butter, fold, and refrigerate for another 30 minutes.

  9. Repeat with the last of the butter, then roll out twice more to ¼ inch thick.

  10. Cut into rounds the size of a breakfast cup.
