Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Grease a 14x10 inch baking tin with butter and dust with flour.

  3. Separate the egg whites and yolks. Beat the egg whites with a pinch of salt until stiff.

  4. Gradually add the sugar while continuing to beat.

  5. Add the egg yolks and beat for 10 minutes.

  6. Gently fold in the flour, previously sifted to remove lumps.

  7. Pour the mixture into the prepared tin and bake for about 15 minutes.

  8. Once cooked, sprinkle with icing sugar and turn out onto a sieve to cool.
