Ingredients

Directions

Prepare the vegetables

  1. Wash the lettuce and celery thoroughly in two or three waters.

  2. Roll them in a clean cloth to dry completely.

  3. Skin the tomatoes by placing them in boiling water for 1 minute, then remove the skins.

  4. Peel and slice the cucumber thinly.

  5. Slice the cooked beetroot.

  6. Shred the lettuce and celery.

Assemble the salad

  1. In a salad bowl, layer the shredded lettuce, followed by the mixed vegetables.

  2. Pour 3-4 tablespoons of mayonnaise dressing over the layers.

  3. Repeat the layering with more lettuce, vegetables, and dressing.

  4. Finish with a layer of finely shredded lettuce on top.

Garnish

  1. Garnish with beetroot cut into fancy shapes and finely shredded celery.

  2. Soak the shredded celery in cold water beforehand to make it curl.

  3. Use cucumber slices or radishes for additional garnishing if desired.

What each ingredient does

Lettuce
Forms the crisp bulk of each layer and gives the salad its fresh, watery texture.
Mayonnaise dressing
Adds fat and richness, coating the vegetables and carrying flavour through the layers.
Tomatoes
Contribute juiciness and mild acidity that brightens the salad.
Cucumber
Adds cool, moist crunch and a light, fresh flavour.
Cooked beetroot
Provides sweetness, earthy flavour and a deep colour that shows through the layers.
Celery
Adds crisp texture and a mild, aromatic bite.

The step that matters

Skinning the tomatoes. Leaving the tomatoes in boiling water for only about a minute loosens the skin without cooking the flesh. Longer heating would soften the tomatoes and make the salad watery.

Swap the tomato

How well each one fits the dish's main ingredients (lettuce, celery, cucumber, beetroot):

  1. Turnipfits better
  2. Mustardfits better
  3. Spinachfits better
  4. Tomatothe original
