Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Forcemeat Balls and Fried Croutons

Ingredients

Directions

  1. Mix the bread crumbs with lemon peel, parsley, herbs, suet, bacon, salt, and pepper.

  2. Bind the mixture with the raw egg and roll into marble-sized balls.

  3. Fry the balls in butter until golden and set aside.

  4. Cut stale bread into cutlet-shaped slices, then cut out the centers to make rings.

  5. Fry the rings in boiling fat until pale golden, then drain well.

  6. Brush one side of the rings with beaten egg white, dip half in parsley and half in sieved egg yolk.

  7. Arrange the rings around the hare and place forcemeat balls in between.
