Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

Prepare

  1. Pick over the whitebait to remove any debris.

  2. Soak the whitebait in a basin of cold water with ice until ready to use.

  3. Heat a deep pan half-full of boiling fat.

  4. Dust the whitebait with flour on a dry cloth.

  5. Place the floured whitebait in a frying basket, shaking off excess flour.

Fry and serve

  1. Fry the whitebait in the boiling fat for about 1½ minutes until golden.

  2. Remove and drain on a wire sieve.

  3. Repeat with remaining whitebait.

  4. Once all are cooked, return them to the frying basket and fry for an additional 1–2 minutes until crisp.

  5. Serve half plain and sprinkle the other half with salt and cayenne pepper; garnish with lemon slices.

What each ingredient does

Whitebait
Small fish that become crisp and golden when fried, with the tender flesh cooking quickly.
Flour
Light dusting forms a thin coating that helps the fish turn golden and crisp in the hot fat.

The step that matters

Returning the cooked whitebait to the fat for a second fry. A short second fry drives off surface moisture, so the fish turns crisp rather than soft and greasy once it has cooled slightly after draining.

Swap the lemon

How well each one fits the dish's main ingredients (flour, pepper):

  1. Limefits better
  2. Lemonthe original
  3. Raisinfits about as well
  4. Avocadofits less well

Fit is the average pairing score against flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
