Potato Border with Crouton

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil the potatoes until just tender, then strain and let them dry in the saucepan with the lid partially on.

  2. Once dry, pass the potatoes through a fine sieve and return them to the saucepan.

  3. Mix in the butter, egg yolk, pepper, and salt.

  4. Shape the mixture into a long roll and form it into a ring, joining the ends together.

  5. Place the ring on a greased baking sheet and flatten the top and sides slightly with a knife.

  6. Brush the top with beaten egg and bake at 350°F (175°C) until golden brown.

  7. For the crouton, cut the crust off the stale loaf and shape it into a cylindrical piece about six inches long and one and a half inches thick.
