Turbot Kettle

Ingredients

Directions

  1. Clean the turbot fish as you would for boiling. You can cut it into slices, fillet it, or leave it whole.

  2. Dip the fish in batter or coat it with egg and breadcrumbs.

  3. Heat a pan two-thirds full of boiling fat until a light blue vapor rises from it.

  4. If the fish is small, use a basket to lift it out easily. For larger fish, use a fish-fryer or a frying pan with a broad fish-slice.

  5. Once cooked, place the fish on a wire rack or kitchen paper to drain.
