Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, flavour and colour of the sauce.
Butter
Adds richness and carries flavour as the onion and tomatoes fry.
Rice flour
Thickens the stock so the sauce becomes smooth and coats the spoon.
Stock
Forms the liquid base of the sauce and adds savoury depth.
Onion
Adds aromatic savoury flavour as it softens in the butter.

The step that matters

Rub the mixture through a fine sieve. Pushing the cooked tomato and onion through a fine sieve removes skins, seeds and fibres, giving the sauce a smooth texture. Leaving the sauce unsieved would leave it coarse and grainy.

  4. Onionthe original

Fit is the average pairing score against tomato, butter, rice, flour, sugar, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
