Why it works: Parsley and chive match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 2,150 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Soles with White Wine

Ingredients

Directions

  1. Skin and clean the soles. Cut off the heads and fins, and trim about 1 inch off the tail.

  2. In a saucepan, combine fish trimmings, mushroom stalks and peelings, herbs, parsley, peppercorns, ⅓ cup white wine, ¾ pint water, and ¼ teaspoon salt.

  3. Bring to a boil, then simmer for 45 minutes.

  4. Butter a pie dish large enough to hold the soles side by side.
