Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Forms the main body of the dish, cooking through gently in the simmering liquid.
French vinegar
Adds acidity to the poaching liquid, brightening the flavour of the fish.
Onion
Adds aromatic flavour to the poaching liquid as it simmers.

The step that matters

Keeping the boil controlled while poaching. Boiling the salmon hard can toughen and break up the delicate flesh. Timing by weight matters because overcooked salmon becomes dry and loses its texture.

Swap the mace

How well each one fits the dish's main ingredients (salmon, vinegar, onion, butter, thyme, fish, lemon):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against salmon, vinegar, onion, butter, thyme, fish, lemon. Candidates are from the same food group and used in at least 100 recipes.
