Chestnut Sauce

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chestnuts

  1. Cut off the tops of the chestnuts.

  2. Roast them in a 400°F (200°C) oven for 20 minutes or until the skins come off easily.

  3. Peel off the outer and inner skins.

Make the sauce

  1. Put the chestnuts in a saucepan with the white stock and butter.

  2. Cook gently for about 1.5 hours until tender.

  3. Rub the mixture through a fine sieve and return to the saucepan.

  4. Add the cream and seasoning, stirring until it almost boils, then serve.

What each ingredient does

Chestnuts
Provide the main body and starchy, creamy texture of the sauce once puréed.
Cream
Adds richness and a smooth, silky mouthfeel to the finished sauce.
White stock
Supplies liquid that softens the chestnuts during slow cooking and helps form the purée.
Butter
Adds fat for richness and a smooth, rounded flavour.

The step that matters

Cook gently for about 1.5 hours until tender. Slow, gentle heat softens the starch in the chestnuts evenly so they purée smoothly. Boiling hard can break down the liquid unevenly and leave the sauce grainy or stuck to the pan.
