Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the main protein; frying briefly adds browning and savoury flavour to the slices.
Butter
Fat for frying that carries flavour and helps the mutton brown.
Flour
Thickens the pan juices into a smooth sauce as it cooks with the stock.
Chutney
Adds sweetness, acidity and fruity flavour to the sauce.
Stock
Liquid that dissolves the pan residue and forms the body of the sauce.

The step that matters

Stirring the flour into the butter and pan juices before adding the stock. Flour must be cooked briefly in the fat and then stirred into the liquid so it hydrates evenly; adding it unmixed or adding stock too quickly leaves lumps. Stir steadily until the sauce boils and thickens.
