Fricassee of Chicken

Ingredients

Directions

  1. Prepare the chicken by cutting it into neat pieces and trimming off the skin.

  2. Place the chicken pieces in a saucepan and cover with cold water. Bring to a boil, then strain.

  3. Wash the chicken pieces in cold water and return them to the pot with fresh water to cover.

  4. Add one onion stuck with four cloves, a blade of mace, six peppercorns, a bunch of herbs, and a teaspoon of salt.

  5. Simmer gently for about 30 minutes until the chicken is tender. Remove the chicken from the stock.

  6. Strain the stock and save it for later use.

  7. Pour hot water over the chicken pieces to cleanse them from any scum or herb pieces.

  8. In a separate pot, bring ¾ cup of milk to a boil with one onion, a blade of mace, a thin strip of lemon peel, and a dust of cayenne pepper.
