Why it works: Mushroom and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 12,525 recipes. Both carry trans-2-decenal, which smells waxy, orange. The science ↓
Mushrooms, Baked
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Wipe the mushrooms with a clean cloth.
Peel the mushrooms.
Cut off the stalks close to the crowns.
If necessary, wash the mushrooms lightly in salted water. Drain the mushrooms well.
Butter a baking dish.
Bake
Lay the mushrooms in the dish, dark sides up, edge to edge.
Place a small piece of butter on each mushroom.
Sprinkle pepper and salt over the mushrooms.
Cover the mushrooms with a well-buttered paper.
Bake in a 350°F (175°C) oven for about 20 minutes, or longer if large.
Serve
Serve on a hot dish, piling the mushrooms in the center and pouring the collected gravy around them.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mushrooms
- Form the main body of the dish, softening and releasing juices that collect as gravy.
- Butter
- Adds richness and moisture, helping the mushrooms brown gently and stay tender in the oven.
The step that matters
Drain the mushrooms well. Mushrooms hold water that leaches out when heated. Excess moisture left on the caps would dilute the collected gravy and slow browning, so draining thoroughly keeps the juices concentrated.
