Pheasant with Rice Border

Ingredients

Directions

  1. Blanch the rice in boiling water and drain.

  2. Melt 4 oz of butter in a stewpan over low heat.

  3. Add the chopped onions and cook gently for 15 minutes without browning.

  4. Stir in the rice and 3 pints of white stock, bringing it to a boil.

  5. Cover with a well-buttered paper and simmer gently for 45 minutes.

  6. Gradually add ¾ pint more stock, stirring occasionally to prevent sticking.

  7. Once the stock is absorbed, remove the paper and season with salt and cayenne.

  8. Stir in the parmesan cheese and 1 oz of butter until melted.

  9. Turn the rice mixture onto a dish, forming a border, and sprinkle with parsley.
