Stewed Sweetbread

Ingredients

Directions

Prepare the sweetbread

  1. Blanch the sweetbread, then remove the skin.

  2. Break the sweetbread into moderately small, equal-sized pieces.

Simmer and thicken

  1. Place the pieces in a stewpan with the stock or milk, cover, and simmer until tender, about 45 minutes.

  2. Lift the cooked pieces out and arrange them on squares of toast to keep warm.

  3. Rub the arrowroot into a smooth paste with a little cold water, then add it to the liquid in the pan.

  4. Stir until the liquid boils again, then let it simmer for 5 minutes to cook the arrowroot.

  5. Remove the pan from the heat, add the yolk of egg (if using) and seasonings.

Serve

  1. Pour the sauce over the sweetbread and serve immediately.

What each ingredient does

Sweetbread
Provides the tender, delicate meat that forms the body of the stew.
White stock or milk
Forms the liquid in which the sweetbread cooks and the base of the sauce.
Arrowroot
Thickens the cooking liquid into a smooth, glossy sauce without clouding it.
Yolk of egg
Enriches the sauce with richness and extra body when added off the heat.

The step that matters

Adding the yolk off the heat. Egg yolk thickens by gentle coagulation and can curdle or scramble if it boils, so it should be stirred in after the pan is removed from the heat.
