Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the juice and rind oil that give the ice its sharp, aromatic flavour.
Egg whites
Whipped into the partly frozen mixture to add lightness and a smoother, airy texture.
Sugar
Sweetens the ice and lowers its freezing point so it stays softly scoopable.

The step that matters

Stir in the egg whites when the mixture begins to set. If the mixture is fully frozen, the beaten whites cannot blend in evenly, leaving a dense, uneven texture. Adding them at the partly frozen stage lets them distribute and trap air.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, syrup, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against sugar, syrup, egg. Candidates are from the same food group and used in at least 100 recipes.
