Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites lighten the batter and help the fritters puff and stay tender.
Flour
Provides the starch and structure that hold the batter together as it fries.
Green corn
Supplies the main body, sweetness and flavour of the fritters.
Milk
Hydrates the flour and loosens the batter to a drop-able consistency.

The step that matters

Folding in the egg whites. Whites hold air only when beaten and handled gently; overmixing deflates them, which makes the fritters dense instead of light.
