What each ingredient does

Mutton
Provides the meat and rich fat that flavour the stew as it cooks slowly.
Potatoes
Bulk out the stew and thicken the liquid as their starch breaks down.
Onions
Add sweetness and savoury depth as they soften into the broth.
Water
Creates the steam and cooking liquid that gently braises the layered ingredients.

The step that matters

Keeping the pan covered and shaking it occasionally. With only water and no stirring, the bottom can scorch during the long gentle stew. A tight lid keeps steam circulating, and occasional shaking moves ingredients so they do not stick and burn.

Swap the onion

How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
