What each ingredient does

Turnips
Form the main body of the mash, providing bulk and a mild, slightly sweet flavour.
Butter
Adds fat for a smooth, rich texture and a glossy finish.

The step that matters

Pressing out the excess water. Turnips hold a lot of water after boiling. Pressing and sieving removes it, so the mash is thick rather than watery and holds its shape on the plate.

Swap the white pepper

How well each one fits the dish's main ingredients (turnip, butter):

  1. Capersfits better
  2. Parsleyfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against turnip, butter. Candidates are from the same food group and used in at least 100 recipes.
