Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Blanch the almonds.
Pound the blanched almonds to a smooth paste with 1 tablespoon of water.
Warm the butter.
Mix the warm butter with the almond paste.
Make the batter
Add the sifted sugar, cream, brandy, and beaten egg whites to the mixture. Mix well.
Butter the cups.
Half fill the cups with the mixture.
Bake and serve
Bake at 350°F (175°C) for 20 to 30 minutes.
Turn the puddings out onto a dish and serve with sweet sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sweet almonds
- Provide the main body and nutty flavour of the paste.
- Butter
- Adds richness and moisture to the almond paste.
- Eggs
- Egg whites add structure and help the puddings set when baked.
- Sifted sugar
- Adds sweetness and helps the texture stay smooth.
The step that matters
Half fill the cups with the mixture.. Egg whites expand in the oven, so overfilling can cause the puddings to spill over or bake unevenly.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
