Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Form the firm cooked centre that holds the whole Scotch egg together.
Sausage meat
Forms the savoury outer layer that surrounds the egg.
Beaten egg
Acts as a glue so the bread crumbs stick to the sausage meat.
Bread crumbs
Form a crisp, golden-brown coating when fried.

The step that matters

Fry in hot fat until golden brown. If the fat is not hot enough, the coating absorbs oil and turns greasy before it browns, and the sausage may stay underdone. Hot fat sets and browns the crumb quickly so the crust stays crisp.

Swap the parsley

How well each one fits the dish's main ingredients (egg, meat, bread):

  1. Nutmegfits better
  2. Parsleythe original
  3. Capersfits about as well
  4. Thymefits less well

Fit is the average pairing score against egg, meat, bread. Candidates are from the same food group and used in at least 100 recipes.
