Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a bowl, mix the flour and a pinch of salt with the beaten egg yolks and milk.

  2. Add the melted butter and mix until smooth.

  3. Let the batter stand for 1 hour.

Bake and serve

  1. Pour the batter into saucers and bake at 350°F (175°C) for about 30 minutes.

  2. Spread a layer of jam on each pancake.

  3. Cover the pancakes.

  4. Sift powdered sugar on top.

  5. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the batter together as it bakes.
Egg yolks
Add richness and help bind the batter for a tender set.
Milk
Supplies moisture that turns the flour and eggs into a pourable batter.
Butter
Adds fat for flavour and a softer, richer texture.
Jam
Adds sweetness and fruity acidity to each pancake.

The step that matters

Letting the batter stand for 1 hour. Resting lets the flour fully hydrate and the gluten relax, which gives a more even, tender texture after baking.
