Cream Buns

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the paste

  1. In a pan, combine butter, water, sugar, and salt. Bring to a boil.

  2. Stir in the flour and continue stirring until it boils again.

  3. Remove from heat and add eggs and vanilla extract. Mix well into a paste.

Pipe and bake

  1. Transfer the mixture into a piping bag fitted with a plain tip.

  2. Pipe the mixture into a waxed tin.

  3. Bake in a moderate oven at 350°F (175°C) for 25 to 30 minutes.

Fill and serve

  1. Once cool, cut a piece from the top and fill with whipped cream. Sprinkle with sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Starch that gelatinises when cooked with the liquid, giving the paste body and a shape that holds.
Eggs
Proteins set in the oven to give structure, and moisture that turns to steam for rising.
Butter
Fat that adds richness and a tender texture to the baked shell.
Water
Boils with the butter and generates steam in the oven that helps the buns puff.

The step that matters

Mixing the eggs into the paste. Eggs must be beaten into the paste off the heat until smooth and glossy. Adding them to a paste that is too hot can scramble them, and undermixing leaves streaks that weaken the rise and structure of the baked shell.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, flour, egg, sugar, cream):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Coconutfits less well
  4. Figfits less well

Fit is the average pairing score against butter, flour, egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
