To Roast a Turkey

Ingredients

Directions

  1. Cut the herbs very small.

  2. Pound the veal as finely as possible.

  3. Mix the veal, herbs, butter, eggs, and enough flour or bread to achieve a proper consistency.

  4. Fill the cavity of the turkey with the mixture.

  5. Paper the breast and place the turkey a good distance from the fire.

  6. When smoke begins to draw to the fire and the turkey looks plump, baste it again and dredge it with flour.

  7. Once cooked, remove it from the heat and serve.
