What each ingredient does

Gooseberries
Provide the fruit body and natural pectin-bearing flesh that gives the preserve its base.
Double refined sugar
Sweetens the preserve and helps it set into a jelly as it thickens.

The step that matters

Adding the sugar to the strained liquid. Sugar must be measured against the liquid volume and dissolved fully before setting. Too little sugar gives a runny preserve that may not set, while the right ratio helps the jelly firm as it cools.
