Galettes De Riz

Oven, in the book's wordsA rather brisk oven

Ingredients

Directions

The book says “a rather brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Beat the yolks of the eggs with the orange-flower water or other flavoring in a bowl.

  2. Boil the milk in a saucepan.

  3. Whisk the egg whites in a separate bowl until firm.

  4. Combine the yolk mixture with the milk, then gently fold in the beaten egg whites.

  5. Pour the mixture into a well-buttered pie dish.

  6. Bake in a preheated oven at 400°F (200°C) until puffed and golden.

  7. Serve immediately to prevent it from deflating.
